Slow-roast duck with glaze

Two-hour duck with bitter-orange glaze and crisp roast roots.

What you’ll need

  • 1 whole duck (about 2 kg)
  • 3 oranges, 1 sliced
  • 4 tbsp honey
  • 2 tbsp sherry vinegar
  • 4 carrots and 2 parsnips
  • Star anise and thyme
  • Flaky salt and pepper

Method

  1. Prick the skin all over; season inside and out.
  2. Roast at 150°C for 90 minutes, draining the fat twice.
  3. Tuck the roots around the bird for the final 30 minutes.
  4. Reduce orange juice, honey and vinegar to a syrup.
  5. Glaze and roast at 210°C for 10 minutes.
  6. Rest 20 minutes; carve and spoon over the glaze.

Cook’s tip

Save the rendered fat — roast potatoes in it within the week.
