Caramelised onion tarte flambée

Jammy onions, bacon lardons and fromage blanc on cracker-thin dough.

What you’ll need

  • 1 ball pizza dough (about 280 g)
  • 200 g fromage blanc
  • 3 onions, halved and sliced
  • 100 g smoked lardons
  • Fresh thyme
  • Salt, pepper and a pinch of sugar

Method

  1. Caramelise the onions low and slow, 25 minutes.
  2. Crisp the lardons in their own fat.
  3. Stretch the dough thin on a hot tray.
  4. Spread with fromage blanc; top with onions and lardons.
  5. Bake at maximum heat 8–10 minutes.
  6. Scatter thyme and serve immediately.

Cook’s tip

Keep the topping thin — a loaded tarte steams instead of crisps.
